Cake Instructions
  1. Preheat oven to 350F.
  2. Melt the butter and mix with the oil, eggs, milk, sugar, vanilla, cinnamon, clove, allspice, nutmeg and whisk until combined.
  3. Add the flour, baking soda, baking powder, sea salt and mix until just combined.
  4. Add the carrots and mix until just combined.
  5. Pour batter into muffin cups (2/3 full). Bake for approximately 18-22 minutes. Be sure to check your cake at 18 minutes. You will know they are done when the cake bounces back when pressed lightly.
Icing Instructions
  1. Add butter, cream cheese, milk, sea salt and vanilla to bowl. Whip until combined.
  2. Add confectioners’ sugar, a cup at a time, and whip until combined.
